Eggless nuts & fruits cake recipe

Ingredients

1 ¾ cup flour
1 cup sugar
1 tsp baking soda
½ tsp salt
1 tsp spice (cinnamon, nutmeg)
1 cup chopped nuts (almonds, walnuts, pecans, hazelnut)
2 cups water
1 cup dried fruit (raisins, cranberries, apricots, figs, pear, apple)
½ cup butter
1 tsp vanilla extract
zest of a citrus fruit (lemon, orange, lime)

Directions:

Preheat the oven to 350 degrees. 
Then, place the 2 cups of water and dried fruit in a sauce pan, and cover.  Cook on medium heat for approximately 10 to 12 minutes, or until the fruit appears to be a bit more plump.
Remove from the stove, pour mixture into a mixing bowl and add butter and vanilla.  Let it stand.
In another mixing bowl, add the dry ingredients: flour, sugar, baking soda, salt and spice. 
.  The spices could also be mixed as long as they add up to 1 teaspoon.  Now, slowly add the dry ingredients into the mixing bowl containing the fruit and water mixture.
Add the citrus zest.  Add the chopped nuts (the nuts may be of a single kind or a mixture such as almonds, walnuts and pecans).
Pour the mixture into a greased bundt pan.  Place in the oven for approximately 35 minutes.  Use a toothpick to test if the cake if finished. 
Remove the cake and allow it to cool before placing it on an airing rack.

 

 

Cherry Nut Cake

Ingredients

1/2 cup shortening
1 1/2 cup sugar
1/2 cup chopped nuts
16 maraschino cherries, chopped
2 1/8 cup cake flour
1/4 tsp. salt
3 tsp. baking powder
1/4 cup evaporated milk, diluted with 1 tsp. vanilla and 1/4 cup cherry juice
4 egg whites, stiffly beaten

Directions:

Cream shortening. Add sugar; cream together thoroughly.  
Mix nuts and cherries together; dredge with 1/8 cup flour.  
Sift remaining flour, salt and baking powder together.
Add to creamed mixture alternately with diluted milk.  
Blend in nuts and cherries.  
Fold in beaten egg whites.  
Pour into greased 8 x 8-inch square pan. Bake at 350 degree for 45 minutes
